Following the success of our Seattle session, the second stop of the STARESSO Flavor Matrix Tasting Event landed beautifully in Guangzhou, hosted at ALL IN COFFEE — a refined coffee space founded by Song Chundan, the 4th place winner of the 2025 World Coffee Roasting Championship.
Although Song Chundan was unable to attend due to the joyful arrival of a new family member, passionate coffee enthusiasts from across Guangzhou still gathered together to explore one core question:

Step 1: Devil Water Palate Training
The tasting journey kicked off with professional "Devil Water" palate training. This sensory exercise sharpened attendees’ taste sensitivity, laying a solid foundation for the subsequent comparative cupping and brewing sessions.
Step 2: The D9+ Flavor Matrix Test
Each specialty coffee was ground with three interchangeable burr configurations: CLEAN, BALANCE, and RICH. The difference in burr geometry brought surprisingly distinct flavor expressions from the exact same bean batch. Some brews delivered bright citrus acidity and crystal-clear tea-like clarity; others amplified caramel sweetness, dense mouthfeel, and concentrated tropical fruit notes. Every side-by-side sip visualized how grinding mechanics flavor layering.
Step 3: Capturing Every Flavor in the Passport
To record every delicate sensory change, customized tasting cups and exclusive STARESSO Flavor Passports were distributed to all attendees.
Coffee lovers carefully documented aromas, acidity, body, and lingering finishes, turning casual tasting into an immersive, systematic flavor exploration. Every filled passport became tangible proof of this flavor journey.
